Durum flour isn't a common sight in the South, but we couldn't resist. We just love Semolina bread. We source our Durum flour from a high-quality organic mill in Marienthal, Kansas, and use it to craft a light, nutty, naturally leavened Sicilian style bread (covered in sesame seeds for an added kick). It's great for sopping up sauce and maybe even better as next morning's toast.
